You can build bridges around your entire map that retract up towards the map edge.

By constructing walls (thus creating a floor on the level above), or;
This makes it difficult or impossible to make rooms in chambers with roads.

The civilization my fortress belongs to is the deep mirrors, a pretty large but yet not massive dwarven kingdom occupying the center of the map.
Fortifications can be carved from stone walls, or built like any other construction.they cannot be carved from soil, though they can be constructed on soil, as described below.
